Make Ahead Mashed Potatoes

Creamy *Freezable* Homemade Mashed Potatoes

I hate boxed potatoes. The taste, the texture, and all the extra junk they add.... No thanks! A few years ago, I started poking around on the web and found out that mashed potatoes are freezable. These are so easy to make and easy to store for later. They keep their texture and taste after thawing and are SO MUCH BETTER FOR YOU than those fake boxed potatoes from the store. The biggest perk for our house is that these are kid tested and approved.


My kids love these and will ask for seconds and sometimes even thirds! 10# fills around five 1-quart bags for us or approximately 25-30 servings. Start to finish, these take around 30-40 minutes to prepare.



Make Ahead Mashed Potatoes


Ingredients:

  • 10# Bag of Potatoes Peeled & Quartered

  • 16 oz Sour Cream

  • 2 Sticks Unsalted Butter

  • Season Salt to taste

  • Garlic Powder to taste

Directions

  1. Bring large stock pot to a boil

  2. Peel and quarter potatoes

  3. Add potatoes to boiling water *I personally use a multi-pot with a submersible colander for these*

  4. Boil for 20-30 minutes

  5. Drain water and mash potatoes

  6. Fold in butter and sour cream

  7. Season to taste

  8. Make sure ingredients are mixed well and add to freezer bags for later use

To prepare from frozen: Thaw and microwave or heat on stove top until you reach desired consistency. Stir regularly to heat evenly.
