Street Corn Chicken

Dinner in less than 45 minutes!


This dinner is quick, easy, and my kids LOVE IT! We like to use our home-grown sweet corn we blanch and put up in the freezer for this recipe on top of our juicy farm fresh chicken breasts!


The farm fresh chicken breasts are often well over a pound each. I carefully trim these with a knife and place the trimmings in a separate baking dish drizzled in olive oil and sprinkled with some salt and pepper. I bake them alongside the main course. These are great cut up in wraps / salads throughout the week!




Juicy chicken, sweet corn with a little spice, and a full meal in under 45 minutes!


Your List of Ingredients

  • 4-6 thin sliced chicken breasts

  • 3 cups sweet corn

  • 1/4 cup mayo

  • 1/4 cup sour cream

  • 1/2 tbsp lime

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 cup Mexican shredded cheese

  • cilantro (optional)

Let’s Get Started

  1. Preheat oven to 350 degrees. Grease a glass 9x13 baking dish and place chicken in the bottom.

  2. In a mixing bowl, combine corn, mayo, sour cream, lime juice, and seasonings.

  3. Spoon corn mixture over top of the chicken.

  4. Sprinkle with cheese and garnish with cilantro.

  5. Bake in the oven for 40 minutes or chicken reaches 165 degrees.

ENJOY!



This dish is so simple, but packs on the flavor. Serve with a side of Mexican style rice, chips and salsa, or my favorite, some tater tots from the air fryer!
